The Shui ethnic people traditionally entertain their guests with bile wine. This way of drinking symbolizes staying devoted to each other heart and soul and sharing each other's comforts and hardships. After slaughtering a pig, they customarily keep the pig's gallbladder. In a feast, when the wine has gone round three times, the host takes out the pig's gallbladder, cuts the duct open and pours the bile into the wine pot, and then fills everyone's cup with the bile wine. The guests are expected to drink it first and then come the hosts. The drinking ritual is usually culminated in a cross-cupped wine, with the guests and the hosts crossing their arms and drinking from one another's cup, symbolizing sincerity. |
