Bamboo shoots from the Wenzheng Mountain, Anhui Province, are known for their qualities of being tender and crispy. During the Southern Song Dynasty (1127-1279), people from Anhui living in the capital city of Lin'an often had their relatives at home send fresh bamboo shoots to them in spring. To keep their tenderness, the relatives cut the freshly-harvested bamboo shoots into chunks and placed them in earthen pots, which were boiled over low rue during shipping. When the bamboo shoots arrived at their destination, they were done and could be served right away, as fresh as fresh could be. Later, bamboo shoots from the Wenzheng Mountain became a tribute paid to the imperial court.
