Baocui (Crisp Fritter with Sesame) is a traditional delicacy of Beijing. By nature, it is a deep-fried pancake, but it is very thin, even to the point of transparency, and very crisp, hence the name “Baocui” (thin and crisp) in Chinese. Though crisp, it stays intact, and tastes crispy and delicious. The snack used to be an imperial food during the Qing Dynasty. It was said that Emperor Kangxi made a tour to the Yuan Ming Yuan (the Old Summer Palace) in disguise. After tasting Baocui, he gave it a high praise. Later, Baocui was introduced to the imperial kitchen of the Qing Dynasty.     

Baocui is crispy and toasty. It can be served as soon as it’s fried, or be crumbed and mixed with vegetables for vegetarian stuffing. It is a very popular snack.
