The Red Glutinous Rice Ball with Stuffing, a special snack in Puxian County, Fujian Province, is a steamed food composed of the skin and the stuffing. The skin is made of glutinous rice. Mix the glutinous rice flour with the red monascus color, add a certain amount of warm water, and knead mixture into dough. Take a small piece each time, pinch it into a slice and the skin is ready.    

It is a main food indispensable to the Spring Festival. The balls are often prepared in the twenty-seventh and twenty-eighth day of the last month in accordance with Chinese lunar calendar. The red color and spherical shape of the balls are used to as a metaphor for a family reunion, flourishing business and good luck. Therefore, from the day the balls are made on, the atmosphere of the Spring Festival becomes more and more intense.
